Breakfast Burrito Prep

A friend of mine gave me this idea for a quick breakfast since my oldest daughter is starting full days of school this week. This is a nice healthy and filling breakfast you can make ahead of time and freeze. Ready in 2.5 minutes by microwaving and only took me roughly 25 minutes to make ahead of time!

Here’s how I did it!

First decide what ingredients you would like in your breakfast burritos and add them to your shopping list. SomeĀ of our favorite things to add in are: ham, turkey sausage, peppers, onion, mushrooms, spinach, feta or cheddar cheese. I like to use whole wheat tortillas for a healthier option but it’s all up to you and what your preferences are.

First I cook all the ingredients with my eggs. I used two separate frying pans and make the kids plain burritos with ham and cheese, and sometimes I sneak spinach in. They never notice! Once it’s all cooked I let it cool for awhile so your tortillas don’t get soggy.

Next, assemble your wraps

Roll them

Wrap in parchment paper and lable the kids ones

I store in a large zip lock and write heating time on the outside of the bag

Freeze them! When your ready to eat heat in the parchment paper for approximately 2.5 minutes, they may need longer depending on your microwave. Heating in the parchment paper helps keep the burritos from drying out in your microwave.
