Homemade Pancake Mix

For years I have wasted my money on boxed grocery store pancake mix, well no more! To be honest, I felt kind of silly when I found out how easy it was to just whip up a batch of homemade mix. I like to make a batch of this, then I label a reminder on my storage container on what to add when I need to mix up a batch of pancakes. My 5 year old is a pancake fanatic, so I make them often. Last time I actually doubled the recipe, it makes a pretty large amount though, so if you a smaller family, or not eating pancakes often, just stick with the regular batch size.

Recipe with blueberries added in, and topped with sliced banana and blueberries

Let’s get started…

Dry pancake mix ingedients:

4 cups all purpose flour

3 tablespoons baking powder

2 teaspoons baking soda

1 teaspoon salt

3 tablespoons sugar

To make pancakes:

1 cup pancake mix

1 egg

1 cup milk


Dry Pancake Mix

1.Combine all ingredients. (You can easily double or triple this part)

2. Store tightly sealed in a dry place.

To Make Pancakes:

3. Preheat griddle or pan over medium high heat.

4. Combine 1 cup pancake mix with egg & milk.

5. Pour a scoop into pan and cook until bubbles on the surface of the pancake have popped (about 3-4 minutes) Flip and cook until underside is a light golden brown (another 1-2 minutes).


Each cup of dry pancake mix makes approximately 5 pancakes. You can probably substitute for brown flour, but pancakes might be more dense and not quite as fluffy.

Some of my favourite toppings : Pecans & Sliced Bananas, Strawberries, Peanut Butter & Banana.

Or try stirring these toppings right into the mix: Blueberries, Apples & Cinnamon, Chocolate chips, Mashed sweet potato (won’t be as fluffy, but easy way to sneak a veggie in for kids), Protein powder (not for kids).
